Crispy Roasty Roots Vegetable Hash with Baked Eggs
This crisp-edged vegetable hash turns humble roots into a hearty brunch or quick meat-free supper. Roasty Roots Seasoning brings warmth, herbs and a little citrus lift to every golden cube.
Use raw vegetables as written or swap in cooked leftovers from a roast. The trick is giving them enough space and resisting the urge to stir constantly.
🧾 Ingredients
- 300g potatoes, cut into 1½cm cubes
- 1 carrot, cut into small cubes
- 1 parsnip, cut into small cubes
- 1 small leek, sliced
- 150g chestnut mushrooms, quartered
- 1½ tbsp Roasty Roots Seasoning
- 2 tbsp rapeseed or olive oil
- 2 large eggs
- 2 tbsp chopped parsley
- Natural yoghurt or brown sauce, to serve
🍴 Instructions
- Put the potatoes, carrot and parsnip in a saucepan, cover with cold water and simmer for 5 minutes. Drain thoroughly and leave to steam dry.
- Heat the oil in a large ovenproof frying pan over medium-high heat. Add the vegetables and cook for 10–12 minutes, turning occasionally, until crisp and golden.
- Add the leek, mushrooms and Roasty Roots Seasoning. Cook for another 6–8 minutes until the mushrooms are browned.
- Make two spaces in the hash and crack in the eggs. Lower the heat, cover and cook for 4–6 minutes until the whites are set to your liking.
- Scatter with parsley and serve straight from the pan.

🥗 Serving Suggestions
Add wilted spinach, baked beans or grilled tomatoes for a bigger breakfast. For four people, double the eggs and serve with toast.
