Roasty Roots Mushroom & Lentil Cottage Pie
This meat-free cottage pie is rich, savoury and properly satisfying. Mushrooms and green lentils create a substantial filling, while Roasty Roots Seasoning adds the familiar herby flavour of a classic roast dinner.
The seasoning also goes into the mash, so the golden topping tastes every bit as good as the filling underneath.
🧾 Ingredients
- 800g floury potatoes, peeled and chopped
- 30g butter
- 75ml milk
- 1 onion, finely chopped
- 2 carrots, diced
- 400g chestnut mushrooms, chopped
- 2 garlic cloves, finely chopped
- 1½ tbsp Roasty Roots Seasoning
- 2 tbsp tomato purée
- 1 x 400g tin green lentils, drained
- 350ml vegetable stock
- 1 tbsp Worcestershire sauce or vegetarian alternative
- 1 tbsp olive oil
🍴 Instructions
- Heat the oven to 190°C fan / 210°C conventional.
- Boil the potatoes in salted water for 15–18 minutes until tender. Drain well, then mash with the butter, milk and ½ tbsp Roasty Roots Seasoning.
- Meanwhile, heat the oil in a wide pan. Cook the onion and carrots for 7 minutes, then add the mushrooms and cook for 8–10 minutes until browned.
- Stir in the garlic, remaining seasoning and tomato purée for 1 minute.
- Add the lentils, stock and Worcestershire sauce. Simmer for 10–12 minutes until thick and spoonable.
- Transfer to a baking dish, top with the mash and rough up the surface with a fork.
- Bake for 25 minutes until bubbling and golden. Rest for 5 minutes before serving.

🥗 Serving Suggestions
Serve with steamed kale, cabbage or peas. The assembled pie can be chilled for up to a day before baking; add 10 minutes to the cooking time.
