Roasty Roots Sausage, Apple & Sweet Potato Traybake

Roasty Roots sausage traybake with caramelised apple, sweet potato, red onion and sage.

Sweet apple, browned sausages and caramelised sweet potato make this an autumn traybake worth looking forward to. Roasty Roots Seasoning adds the herby roast-dinner character that ties the whole dish together.

The apples go into the oven halfway through so they soften and colour without disappearing. A little mustard and cider vinegar balance their sweetness beautifully.

🧾 Ingredients

  • 8 good-quality pork or vegetarian sausages
  • 600g sweet potatoes, peeled and cut into 3cm chunks
  • 2 red onions, cut into wedges
  • 2 eating apples, cored and cut into wedges
  • 2 tbsp Roasty Roots Seasoning
  • 2 tbsp rapeseed or olive oil
  • 1 tbsp wholegrain mustard
  • 1 tbsp cider vinegar
  • 8 fresh sage leaves

🍴 Instructions

  1. Heat the oven to 200°C fan / 220°C conventional.
  2. Put the sweet potato and red onions in a large roasting tin. Toss with the oil and 1½ tbsp Roasty Roots Seasoning.
  3. Add the sausages, turning them in the seasoned oil, and roast for 20 minutes.
  4. Mix the mustard, cider vinegar and remaining seasoning. Add the apple wedges and sage to the tin, drizzle over the mustard mixture and turn gently.
  5. Roast for another 20–25 minutes, turning the sausages once, until they are cooked through and the vegetables are caramelised.
  6. Rest for 3 minutes before serving so the roasting juices settle.

🥗 Serving Suggestions

Serve with steamed cabbage, green beans or a sharp leaf salad. A spoonful of onion chutney is also excellent alongside.
