Roasty Roots Vegetable & Cheddar Cobbler

Roasty Roots vegetable cobbler with carrots, parsnips, leeks, peas and golden cheddar scone topping.

A bubbling vegetable filling topped with golden cheddar scones is comfort food at its finest. Roasty Roots Seasoning brings a traditional roast-dinner flavour to the creamy carrots, parsnips and leeks underneath.

The cobbler topping is intentionally rustic: handle it lightly and drop it on in rough mounds for crisp edges and soft, fluffy centres.

🧾 Ingredients

  • 2 carrots, cut into small chunks
  • 2 parsnips, cut into small chunks
  • 2 leeks, thickly sliced
  • 150g frozen peas
  • 1½ tbsp Roasty Roots Seasoning
  • 30g butter
  • 30g plain flour
  • 500ml vegetable stock
  • 100ml milk
  • For the topping: 225g self-raising flour
  • 50g cold butter, cubed
  • 100g mature cheddar, grated
  • 125ml milk

🍴 Instructions

  1. Heat the oven to 190°C fan / 210°C conventional.
  2. Simmer the carrots and parsnips in water for 7 minutes, then drain.
  3. Melt 30g butter in a large ovenproof casserole. Cook the leeks for 5 minutes, then stir in the Roasty Roots Seasoning and plain flour.
  4. Gradually stir in the stock and 100ml milk. Add the drained roots and peas, then simmer for 5 minutes until lightly thickened.
  5. For the topping, rub the cold butter into the self-raising flour. Stir through 75g cheddar, then mix in enough milk to form a soft dough.
  6. Divide into six rough mounds and place over the filling. Scatter with the remaining cheese.
  7. Bake for 25–30 minutes until the cobbles are risen and golden and the filling is bubbling. Rest for 5 minutes before serving.

🥗 Serving Suggestions

Serve with dark leafy greens or a crisp salad. Leftovers reheat best in the oven so the cheddar topping becomes crisp again.
