Piri Piri Halloumi & Vegetable Traybake
Golden-edged halloumi, juicy tomatoes and caramelised vegetables make this effortless traybake feel much more exciting than the amount of work involved. The savoury heat of Piri Piri Seasoning cuts through the creamy cheese beautifully.
🥣 Ingredients
- 225g halloumi, cut into thick slices
- 2 courgettes, thickly sliced
- 1 red pepper, sliced
- 1 yellow pepper, sliced
- 250g cherry tomatoes
- 1 red onion, cut into wedges
- 2 tbsp Piri Piri Seasoning
- 3 tbsp olive oil
- 1 lemon
- Fresh parsley, optional
👩🍳 Instructions
- Heat the oven to 220°C/200°C fan/gas 7. Put the courgettes, peppers, tomatoes and onion in a large roasting tray.
- Mix 1½ tbsp Piri Piri Seasoning with 2½ tbsp olive oil. Pour over the vegetables and toss well. Roast for 20 minutes.
- Turn the vegetables and lay the halloumi on top. Brush the cheese with the remaining oil and sprinkle over the remaining seasoning.
- Return to the oven for 12–15 minutes until the halloumi is golden and the vegetables are tender and caramelised.
- Squeeze over lemon and scatter with parsley if liked. Avoid adding extra salt until tasted, as both halloumi and the blend are already salty.

🍽️ Serving Suggestions
Serve with couscous, warm flatbreads or a simple leafy salad. For a plant-based version, replace halloumi with pressed tofu.
💚 Why This Recipe Works
Roasting the vegetables before adding halloumi gives them time to caramelise without overcooking the cheese. Lemon balances the salt and chilli at the finish.
