Piri Piri Butter Bean & Sweet Potato Stew
Creamy butter beans and soft sweet potato make this colourful plant-based stew hearty enough for the chilli warmth of Piri Piri. It is simple, economical and brilliant for batch cooking, with a thick tomato broth that demands a slice of crusty bread.
🥣 Ingredients
- 2 x 400g tins butter beans, drained and rinsed
- 600g sweet potatoes, peeled and cut into chunks
- 1 red pepper, diced
- 1 large onion, chopped
- 2 tbsp olive oil
- 2 tbsp Piri Piri Seasoning
- 2 tbsp tomato purée
- 400g tin chopped tomatoes
- 500ml vegetable stock
- 150g baby spinach
- ½ lemon
- Crusty bread, to serve
👩🍳 Instructions
- Heat the oil in a large saucepan. Cook the onion and red pepper for 7–8 minutes until softened.
- Stir in the Piri Piri Seasoning and tomato purée. Cook for 1 minute until fragrant.
- Add the sweet potato, chopped tomatoes and stock. Bring to a simmer, cover loosely and cook for 15–18 minutes.
- Stir in the butter beans and simmer uncovered for another 8–10 minutes until the sweet potato is tender and the sauce has thickened.
- Fold through the spinach until wilted. Finish with lemon juice, taste before adding any extra salt and serve with crusty bread.
