Mulled Wine Spiced Red Cabbage with Apple
This glossy red cabbage brings colour, warmth and a welcome sweet-and-sour contrast to a rich roast dinner. Mulled Wine Spice gives it festive depth while apple and cider vinegar keep every forkful bright.
It is even better reheated, making it exactly the sort of side dish you want at Christmas: one that can be made a day or two before everyone arrives.
🧾 Ingredients
- 1kg red cabbage, quartered, cored and finely shredded
- 1 large red onion, finely sliced
- 2 eating apples, cored and thinly sliced
- 150ml red wine
- 2 tbsp cider vinegar
- 50g soft brown sugar
- 1 tbsp Mulled Wine Spice
- 30g butter or 2 tbsp olive oil
- ½ tsp fine sea salt
🍴 Instructions
- Heat the oven to 160°C fan / 180°C conventional.
- Put the cabbage, onion and apples into a large lidded casserole dish.
- Mix the wine, cider vinegar, sugar, Mulled Wine Spice and salt, then pour over the cabbage. Dot with butter or drizzle with oil.
- Cover tightly and cook for 1 hour 30 minutes, stirring after 45 minutes.
- Remove the lid and cook for a further 20–30 minutes until tender and glossy, with very little liquid remaining.
- Taste and add a small splash of vinegar if you would like a sharper finish.

🥗 Serving Suggestions
Serve with roast turkey, pork, duck, sausages or a mushroom Wellington. Cool and refrigerate for up to three days, then reheat gently with a splash of water.
