Mulled Wine Chocolate Brownies

Rich fudgy mulled wine chocolate brownies with crackled tops and fine curls of fresh orange zest.

Dark chocolate and red wine are natural partners, and these deeply fudgy brownies make the combination especially festive. Mulled Wine Spice adds gentle aromatic warmth while orange zest lifts the rich chocolate.

Reducing the wine first concentrates its flavour without adding excess liquid to the batter. The result is a brownie with crisp, papery tops and a dense centre—not a slice of chocolate cake pretending to be one.

🧾 Ingredients

  • 150ml fruity red wine
  • 200g dark chocolate, roughly chopped
  • 175g unsalted butter
  • 250g caster sugar
  • 3 large eggs
  • 2 tsp Mulled Wine Spice
  • Finely grated zest of 1 orange
  • 100g plain flour
  • 30g cocoa powder
  • ¼ tsp fine sea salt

🍴 Instructions

  1. Pour the wine into a small saucepan and boil for 8–10 minutes until reduced to about 50ml. Set aside to cool.
  2. Heat the oven to 170°C fan / 190°C conventional. Grease and line a 20cm square tin.
  3. Melt the chocolate and butter together gently, then leave for 5 minutes.
  4. Whisk the sugar and eggs for 2–3 minutes until slightly thickened. Fold in the chocolate mixture, reduced wine, Mulled Wine Spice and orange zest.
  5. Sift in the flour, cocoa and salt, then fold just until no dry streaks remain.
  6. Pour into the tin and bake for 24–28 minutes. The edges should be set while the centre retains a slight wobble.
  7. Cool completely in the tin before cutting into squares.

🥗 Serving Suggestions

Serve at room temperature for the fudgiest texture, or warm gently and add vanilla ice cream. They keep in an airtight container for four days.
