Mixed Sweet Spice Orange-Glazed Gammon
This orange-glazed gammon proves that Mixed Sweet Spices belongs in savoury cooking too. Its cinnamon, clove, coriander, fennel, ginger, mustard and nutmeg create a glossy aromatic crust that works beautifully with salty gammon.
Serve it hot as a Sunday centrepiece or allow it to cool for generous sandwiches, salads and Boxing Day leftovers.
🧾 Ingredients
- 1.5kg unsmoked gammon joint
- 1 onion, quartered
- 2 bay leaves
- 6 black peppercorns
- 150ml orange juice
- 3 tbsp thick-cut orange marmalade
- 2 tbsp light brown sugar
- 2 tsp Mixed Sweet Spices
- 1 tbsp cider vinegar
- 6 shallots, peeled, optional
👩🍳 Instructions
- Put the gammon into a large saucepan with the onion, bay leaves and peppercorns. Cover with cold water and bring to a gentle simmer.
- Partially cover and simmer for 75 minutes, topping up the water if needed. Lift the gammon out and leave until cool enough to handle.
- Heat the oven to 200°C, 180°C fan or Gas 6. Carefully remove the skin, leaving a thin, even layer of fat. Score the fat lightly in a diamond pattern.
- Mix the orange juice, marmalade, brown sugar, Mixed Sweet Spices and cider vinegar. Put the gammon and shallots into a roasting tin and brush generously with the glaze.
- Roast for 25–30 minutes, brushing with more glaze twice, until glossy and caramelised. If the glaze darkens too quickly, cover loosely with foil.
- Rest for 15 minutes before carving into slices.

🍽️ Serving Suggestions
Serve with roast potatoes, greens and the glazed shallots. Cold slices are excellent with chutney, crusty bread or in a festive sandwich.

🌿 Try It With
Add Whole Cloves to the scored fat for a traditional finish, or simmer the joint with a Cinnamon Stick.
