Jammin Jamaican White Fish Traybake
Flaky white fish, golden baby potatoes and sweet roasted peppers make this an easy all-in-one dinner. Jammin Jamaican Seasoning adds smoky warmth and colour without overpowering the fish. Made with Jammin Jamaican Seasoning.
🥣 Ingredients
- 4 thick white fish fillets, about 150g each
- 750g baby potatoes, halved
- 2 tbsp Jammin Jamaican Seasoning
- 2 tbsp olive oil
- 1 red pepper, sliced
- 1 yellow pepper, sliced
- 250g cherry tomatoes
- 1 red onion, cut into wedges
- Juice of 1 lime
- Fresh parsley or coriander, to serve
Instructions
- Heat the oven to 210°C/190°C fan/gas 7. Toss the potatoes with 1 tbsp oil and half the seasoning. Roast for 20 minutes.
- Add the peppers, tomatoes and red onion to the tray. Toss gently and roast for another 12 minutes.
- Rub the fish with the remaining oil and seasoning. Nestle it among the vegetables.
- Roast for 10–12 minutes, depending on thickness, until the fish flakes easily and is opaque through the centre.
- Squeeze over the lime juice and finish with fresh herbs before serving.
