Caribbean Pork & Pineapple Skewers with Pepper Rice
Sweet pineapple, tender pork and colourful peppers turn beautifully smoky around the edges in these easy Caribbean-inspired skewers. They are lively enough for a barbecue and simple enough for a weeknight. Made with Jammin Jamaican Seasoning.

- 2 tbsp Jammin Jamaican Seasoning
- 1 tbsp olive oil
- 1 tbsp lime juice
- 250g fresh pineapple, cut into chunks
- 1 red pepper, cut into pieces
- 1 red onion, cut into wedges
- 250g long-grain rice

- 2 tbsp chopped parsley
- Lime wedges, to serve
Instructions
- Mix the seasoning, olive oil and lime juice. Toss with the pork and leave for 20 minutes.
- Thread the pork, pineapple, pepper and onion onto skewers, keeping the pieces snug but not tightly packed.
- Cook under a hot grill or on a barbecue for 12–15 minutes, turning regularly, until the pork is cooked and the edges are lightly charred.
- Meanwhile, simmer the rice in the stock according to the packet instructions. Fold through the diced pepper and parsley.
