Caribbean Pork & Pineapple Skewers with Pepper Rice

Caribbean-spiced pork and pineapple skewers served with pepper rice and fresh lime on an outdoor wooden table.

Sweet pineapple, tender pork and colourful peppers turn beautifully smoky around the edges in these easy Caribbean-inspired skewers. They are lively enough for a barbecue and simple enough for a weeknight. Made with Jammin Jamaican Seasoning.

🥣 Ingredients

  • 600g pork loin, cut into chunks
  • 2 tbsp Jammin Jamaican Seasoning
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • 250g fresh pineapple, cut into chunks
  • 1 red pepper, cut into pieces
  • 1 red onion, cut into wedges
  • 250g long-grain rice
  • 500ml vegetable stock
  • ½ red pepper, finely diced
  • 2 tbsp chopped parsley
  • Lime wedges, to serve

Instructions

  1. Mix the seasoning, olive oil and lime juice. Toss with the pork and leave for 20 minutes.
  2. Thread the pork, pineapple, pepper and onion onto skewers, keeping the pieces snug but not tightly packed.
  3. Cook under a hot grill or on a barbecue for 12–15 minutes, turning regularly, until the pork is cooked and the edges are lightly charred.
  4. Meanwhile, simmer the rice in the stock according to the packet instructions. Fold through the diced pepper and parsley.
  5. Serve the skewers over the pepper rice with fresh lime.
