Jammin Jamaican Coconut Prawns with Mango Rice

Jammin Jamaican spiced prawns in a creamy coconut and tomato sauce served with mango rice and lime.

Juicy prawns simmer in a creamy coconut and tomato sauce with warm Jamaican-inspired spice. Fresh mango folded through fluffy rice keeps every mouthful bright, fragrant and beautifully balanced. Made with Jammin Jamaican Seasoning.

🥣 Ingredients

  • 400g raw king prawns, peeled
  • 1½ tbsp Jammin Jamaican Seasoning
  • 1 tbsp vegetable oil
  • 1 small onion, finely chopped
  • 1 red pepper, sliced
  • 2 garlic cloves, crushed
  • 400g chopped tomatoes
  • 200ml coconut milk
  • 250g basmati rice
  • 150g ripe mango, diced
  • Juice of ½ lime
  • Fresh coriander, to serve

Instructions

  1. Cook the rice according to the packet instructions. Rest it covered while you prepare the prawns.
  2. Heat the oil in a wide pan. Soften the onion and pepper for 5 minutes, then add the garlic and Jammin Jamaican Seasoning for 30 seconds.
  3. Stir in the tomatoes and coconut milk. Simmer uncovered for 8–10 minutes until slightly thickened.
  4. Add the prawns and cook for 3–4 minutes until pink, curled and just cooked through.
  5. Fold the mango and lime juice through the rice. Serve with the coconut prawns and fresh coriander.

🍽️ Serving Suggestions

Add steamed greens or a crunchy cucumber salad. For extra heat, finish with a small pinch of cayenne.
