Hot Curry Sweetcorn Fritters with Mango Chutney
Crisp-edged, golden and packed with juicy sweetcorn, these fritters are a cheerful way to take Hot Curry Powder beyond the usual curry pot. The corn’s sweetness is a brilliant match for the chilli warmth, especially with a spoonful of fruity mango chutney on the side.
Ingredients
- 340g tin sweetcorn, drained very well
- 100g self-raising flour
- 1½ tbsp Hot Curry Powder
- ½ tsp fine salt
- 2 large eggs, beaten
- 3 tbsp milk
- 3 spring onions, finely sliced
- Small handful fresh coriander, chopped
- 3–4 tbsp vegetable oil, for shallow frying
- Mango chutney, lime wedges and salad, to serve
Instructions
- Tip two-thirds of the sweetcorn into a bowl and crush roughly with a potato masher or fork. Stir in the remaining whole kernels.
- Add the flour, Hot Curry Powder and salt. Stir in the eggs and milk to make a thick, scoopable batter, then fold through the spring onions and coriander.
- Heat a thin layer of oil in a large non-stick frying pan over a medium heat.
- Drop heaped tablespoons of batter into the pan and flatten slightly. Fry in batches for 2–3 minutes per side until deeply golden and cooked through.
- Transfer to a tray lined with kitchen paper and keep warm in a low oven while you cook the remaining fritters.
- Serve hot with mango chutney, lime wedges and a fresh coriander salad.

Ideal for brunch, lunchboxes or a relaxed sharing plate. Add avocado and a poached egg for a fuller meal, or make smaller fritters for party bites.
