Hot Curry Sausage & Potato Traybake

Home-cooked hot curry sausage and potato traybake with peppers and red onions

Crisp potatoes, browned sausages and sweet roasted peppers make this colourful traybake gloriously simple. The Hot Curry Powder creates a spicy coating in seconds. Hot Curry Powder supplies the bold, warming spice in one balanced blend.

Ingredients

  • 800g baby potatoes, halved
  • 8 good-quality pork or plant-based sausages
  • 2 peppers, cut into chunks
  • 2 red onions, cut into wedges
  • 2½ tbsp olive oil
  • 1½ tbsp Hot Curry Powder
  • 1 tbsp mango chutney
  • Juice of ½ lemon
  • Fresh coriander or parsley

Instructions

  1. Heat the oven to 210°C/190°C fan/gas 7.
  2. Parboil the potatoes for 8 minutes, then drain and allow them to steam dry.
  3. Mix the oil, Hot Curry Powder and mango chutney in a large roasting tin.
  4. Add the potatoes, sausages, peppers and onions; turn everything thoroughly in the spicy oil.
  5. Roast for 35–40 minutes, turning once, until the sausages are cooked and the potatoes are crisp.
  6. Finish with lemon juice and fresh herbs. Taste before adding extra salt.

Serving Suggestions

Bring the tray straight to the table with cooling yoghurt and a crunchy cucumber salad.
