Hot Curry Roasted Aubergine & Chickpea Traybake
This traybake is proof that fiery comfort food does not need meat—or six different pans. Aubergine turns silky at the centre and caramelised at the edges, chickpeas become lightly crisp, and Hot Curry Powder brings bold warmth to every roasted corner.
Ingredients
- 2 large aubergines, cut into 3cm chunks
- 400g tin chickpeas, drained, rinsed and dried
- 1 large red onion, cut into wedges
- 250g cherry tomatoes
- 3 tbsp olive oil
- 2 tbsp Hot Curry Powder
- ½ tsp fine salt
- 150g natural or plant-based yoghurt
- 1 tbsp tahini
- ½ lemon, juice only
- Small handful fresh coriander
- Flatbreads or couscous, to serve
Instructions
- Heat the oven to 220°C/200°C fan/gas 7. Put the aubergine, chickpeas and onion into a large roasting tin.
- Mix the olive oil, Hot Curry Powder and salt. Pour over the vegetables and toss thoroughly, spreading everything into one generous layer.
- Roast for 20 minutes. Turn the vegetables, add the cherry tomatoes and roast for another 18–22 minutes until the aubergine is soft and deeply golden.
- Meanwhile, mix the yoghurt, tahini and lemon juice with 1–2 tbsp cold water to make a spoonable dressing.
- Taste the traybake and add a pinch more salt or squeeze of lemon if needed.
- Drizzle over the tahini yoghurt, scatter with coriander and take the full roasting tin to the table.

Serving Suggestions
Serve with warm flatbreads, lemony couscous or a crisp green salad. Leftovers make an excellent lunch tucked into pittas with extra dressing.
Why This Recipe Works
A hot oven gives aubergine the caramelised edges it needs while drying the chickpeas helps them crisp. The blend seasons the whole tray evenly, and the tangy dressing cools its heat.
