Sausage & Apple Pastry Plait with Fruity Stuffing Seasoning

This handsome pastry plait looks impressive on the table but is surprisingly easy to assemble. Sausage meat, diced apple and Fruity Stuffing Seasoning create a juicy savoury filling inside crisp, deeply golden puff pastry.

Serve it warm for lunch, pack slices for a picnic or make smaller plaits for a buffet. A vegetarian sausage filling works beautifully too.

🧾 Ingredients

  • 400g good-quality pork or vegetarian sausagemeat
  • 1 eating apple, cored and finely diced
  • 75g fresh breadcrumbs
  • 1½ tbsp Fruity Stuffing Seasoning
  • 1 tbsp wholegrain mustard
  • 1 x 320g sheet ready-rolled puff pastry
  • 1 egg, beaten
  • 1 tbsp sesame or poppy seeds, optional

🍴 Instructions

  1. Heat the oven to 200°C fan / 220°C conventional and line a baking tray.
  2. Mix the sausagemeat, apple, breadcrumbs, Fruity Stuffing Seasoning and mustard until just combined.
  3. Unroll the pastry with a short edge facing you. Shape the filling into a compact log down the central third.
  4. Cut diagonal strips, about 2cm wide, along both sides of the filling. Fold the top and bottom pastry edges inward, then cross the strips alternately over the filling.
  5. Transfer to the tray, brush with beaten egg and scatter with seeds if using.
  6. Bake for 35–40 minutes until the pastry is deeply golden and the centre reaches 75°C.
  7. Rest for 10 minutes before slicing.

🥗 Serving Suggestions

Serve warm with chutney and dressed leaves, or cold as part of a picnic. Leftovers keep refrigerated for two days.

💛 Why This Recipe Works

Breadcrumbs catch the apple and sausage juices, protecting the pastry from sogginess. Resting the baked plait makes the filling easier to slice cleanly.
