Pork, apple and herbs are natural partners, and this quick pan dinner lets all three shine. Fruity Stuffing Seasoning forms a savoury crust on the chops while its fruity character blends seamlessly into the cider gravy.

Cooking the apples in wedges keeps them intact, giving the sauce a gentle sweetness rather than turning it into purée. It feels like Sunday food but is practical enough for midweek.

🧾 Ingredients

  • 4 bone-in pork chops
  • 1½ tbsp Fruity Stuffing Seasoning
  • 1 tbsp rapeseed or olive oil
  • 1 onion, thinly sliced
  • 2 eating apples, cored and cut into wedges
  • 1 tbsp plain flour
  • 200ml dry cider
  • 250ml chicken stock
  • 1 tsp wholegrain mustard
  • 1 tsp cider vinegar, if needed

🍴 Instructions

  1. Pat the pork chops dry and rub all over with 1 tbsp Fruity Stuffing Seasoning.
  2. Heat the oil in a large frying pan over medium-high heat. Brown the chops for 3–4 minutes on each side, then transfer to a plate.
  3. Lower the heat, add the onion and cook for 6 minutes. Add the apple wedges and cook for another 3 minutes.
  4. Stir in the flour and remaining seasoning for 1 minute. Gradually add the cider and stock, stirring well, then add the mustard.
  5. Return the chops and any resting juices to the pan. Simmer gently for 8–12 minutes until the pork reaches 63°C, then rest in the sauce for 3 minutes.
  6. Taste the gravy. Add the cider vinegar only if the apples have made it sweeter than you prefer.
