Mushroom, Lentil & Apricot Roast with Fruity Stuffing Seasoning
This plant-based roast has a proper sliceable texture and enough savoury depth to command the centre of the table. Mushrooms and lentils provide substance, while dried apricots echo the gentle fruitiness of Fruity Stuffing Seasoning.
It contains no nuts, making it a useful alternative to the usual festive nut roast. Letting it rest after baking is essential for neat, generous slices.
🧾 Ingredients
- 2 tbsp ground flaxseed mixed with 5 tbsp water
- 1 tbsp olive oil
- 1 onion, finely chopped
- 1 carrot, coarsely grated
- 400g chestnut mushrooms, finely chopped
- 2 garlic cloves, chopped
- 2 tbsp Fruity Stuffing Seasoning
- 1 x 400g tin green lentils, drained and rinsed
- 100g dried apricots, finely chopped
- 100g fresh breadcrumbs, check vegan if required
- 1 tbsp tomato purée
- 2 tbsp chopped parsley
🍴 Instructions
- Mix the ground flaxseed with the water and leave for 10 minutes. Heat the oven to 180°C fan / 200°C conventional and line a 900g loaf tin.
- Heat the oil in a large frying pan. Cook the onion and carrot for 6 minutes, then add the mushrooms and cook for 12–15 minutes until dry and well browned.
- Stir in the garlic, Fruity Stuffing Seasoning and tomato purée for 1 minute.
- Roughly mash half the lentils, then combine all the lentils with the mushroom mixture, apricots, breadcrumbs, parsley and flax mixture.
- Press firmly into the tin, smoothing the top. Cover loosely with foil and bake for 30 minutes.
- Remove the foil and bake for another 20–25 minutes until firm and browned.
- Rest in the tin for 15 minutes before turning out and slicing.

🥗 Serving Suggestions
Serve with roast potatoes, carrots, greens and vegetarian gravy. Leftover slices are excellent browned in a frying pan the following day.
💛 Why This Recipe Works
Cooking the mushrooms until dry prevents a soft loaf, while partly mashed lentils and hydrated flax bind everything together. Apricot provides small bursts of sweetness rather than dominating.
