🍆 Bengali Five Spice Aubergine & Tomato Curry

This Bengali Five Spice Aubergine and Tomato Curry combines soft, golden aubergine with a thick tomato and onion sauce. Tempering our Bengali Five Spice blend in hot oil releases a wonderfully fragrant whole-seed flavour that suits the vegetables beautifully.

It is a rich, naturally vegan curry that is delicious with rice, flatbread or dal.

🥣 Ingredients

  • 2 large aubergines, cut into chunky pieces
  • 3 tbsp vegetable or rapeseed oil
  • 2 tsp Bengali Five Spice blend
  • 1 large onion, finely sliced
  • 3 garlic cloves, crushed
  • 1 tbsp grated fresh ginger
  • 1 tbsp tomato purée
  • 400g tin chopped tomatoes
  • 150ml vegetable stock
  • ½ tsp salt, or to taste
  • Fresh coriander and lemon juice, to serve

🍳 How to Make Bengali Five Spice Aubergine Curry

  1. Heat 2 tablespoons of oil in a wide frying pan. Brown the aubergine in batches for 8–10 minutes, adding a little more oil if necessary, then transfer to a plate.
  2. Add the remaining oil to the pan. Add the Bengali Five Spice and cook for 30 seconds until fragrant.
  3. Add the onion and cook gently for 7–8 minutes until soft. Stir in the garlic and ginger and cook for 1 minute.
  4. Add the tomato purée, chopped tomatoes and stock. Simmer for 10 minutes.
  5. Return the aubergine to the sauce. Cover loosely and simmer for 12–15 minutes until tender, stirring carefully so the pieces retain some shape.
  6. Season to taste and finish with coriander and lemon juice.

🍽 Serving Suggestions

Serve with basmati rice, naan or red lentil dal. A spoonful of yoghurt or mango chutney makes a lovely contrast.
