🔥 Smokey Bean Loaded Sweet Potatoes
Soft baked sweet potatoes piled high with smoky beans, tomatoes and peppers make a colourful and satisfying dinner. Our Smokey Bean Seasoning gives the filling plenty of depth without loads of ingredients.
🥣 Ingredients
- 4 medium sweet potatoes
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 1 red pepper, diced
- 2 tbsp Smokey Bean Seasoning
- 1 x 400g tin mixed beans or black beans, drained and rinsed
- 1 x 400g tin chopped tomatoes
- 1 tbsp tomato purée
- 4 tbsp natural yoghurt, to serve
- 2 spring onions, sliced
👩🍳 Instructions
- Heat the oven to 200°C/180°C fan/Gas 6. Prick the sweet potatoes and bake for 45–60 minutes until completely tender.
- About 20 minutes before they are ready, heat the oil in a frying pan. Cook the onion and pepper for 5–6 minutes.
- Stir in the Smokey Bean Seasoning and tomato purée and cook for 1 minute.
- Add the beans and chopped tomatoes and simmer for 10–12 minutes until thick and rich.
- Split the baked sweet potatoes, fluff the centres with a fork and spoon over the smoky bean mixture.
- Finish with natural yoghurt and sliced spring onions.
