Smokey Bean Sausage & Butter Bean Casserole

Smokey Bean sausage and butter bean casserole with carrots and creamy mashed potato.

This cosy sausage casserole has all the flavour of slow cooking without taking all afternoon. Smokey Bean builds a rich tomato and barbecue-style sauce that is sweet, smoky and completely free from chilli heat.

Butter beans make the casserole extra satisfying and stretch eight sausages into a generous family meal.

🧾 Ingredients

  • 8 good-quality pork or vegetarian sausages
  • 1 tbsp olive oil
  • 1 onion, finely sliced
  • 2 carrots, cut into chunks
  • 2 tbsp Smokey Bean
  • 2 x 400g tins butter beans, drained
  • 1 x 400g tin chopped tomatoes
  • 250ml chicken or vegetable stock
  • 1 tbsp Worcestershire sauce or vegan alternative
  • Creamy mash, to serve

🍴 Instructions

  1. Heat the oil in a wide casserole. Brown the sausages all over for 8–10 minutes, then transfer to a plate.
  2. Add the onion and carrots and cook for 7 minutes until beginning to soften.
  3. Stir in the Smokey Bean and cook for 1 minute.
  4. Return the sausages and add the butter beans, tomatoes, stock and Worcestershire sauce.
  5. Simmer uncovered for 25–30 minutes, stirring occasionally, until the sausages are cooked and the sauce is thick.
  6. Serve with creamy mash and spoon over plenty of sauce.

🥗 Serving Suggestions

Mashed potato is perfect here, but crusty bread or baked potatoes are equally useful for catching the sauce.
