Roast Chicken Seasoning Sunday Roast with Lemon Gravy
A golden roast chicken with crisp skin, juicy meat and proper gravy is hard to beat. Roast Chicken Seasoning gives the bird that familiar Sunday-roast aroma with beautifully balanced herbs and savoury depth.
Lemon and onion roast underneath the chicken, flavouring the pan juices without creating extra work. The result is a generous centrepiece that feels special but is reassuringly straightforward.
🧾 Ingredients
- 1 whole chicken, about 1.7kg
- 2 tbsp Roast Chicken Seasoning
- 2 tbsp softened butter
- 1 lemon, halved
- 2 onions, cut into thick wedges
- 2 carrots, roughly chopped
- 250ml chicken stock
- 1 tbsp plain flour
- Freshly ground black pepper, to taste
🍴 Instructions
- Take the chicken out of the fridge 30 minutes before cooking. Heat the oven to 190°C fan / 210°C conventional.
- Mix the Roast Chicken Seasoning with the softened butter. Carefully loosen the breast skin and rub half underneath it, then spread the rest over the outside of the chicken.
- Put the lemon halves inside the cavity. Arrange the onions and carrots in a roasting tin, sit the chicken on top and pour 100ml stock around it.
- Roast for 1 hour 20 minutes to 1 hour 35 minutes, basting once, until the juices run clear and the thickest part of the thigh reaches 75°C.
- Transfer the chicken to a board, cover loosely and rest for 20 minutes.
- To make the gravy, spoon off excess fat from the tin. Stir the flour into the roasted vegetables and juices, then gradually whisk in the remaining stock. Simmer for 5 minutes and strain if you prefer a smooth gravy.
- Carve the chicken and serve with the hot lemon gravy.

Serve with crisp roast potatoes, seasonal greens and stuffing. Taste the gravy before adding salt because the seasoning and stock may already provide enough.
