Creamy Chicken, Leek & Mustard Pie with Roast Chicken Seasoning

Creamy Roast Chicken Seasoning chicken, leek and mustard pie with deeply golden flaky pastry.

This creamy chicken and leek pie has everything you want from cold-weather comfort food: tender filling, gentle mustard warmth and a deeply golden pastry lid. Roast Chicken Seasoning adds the savoury, herby character of a roast dinner without needing a cupboard full of separate herbs.

It works beautifully with freshly cooked chicken thighs or leftover roast chicken, making it equally useful after Sunday lunch and on a busy midweek evening.

🧾 Ingredients

  • 1 tbsp rapeseed or olive oil
  • 500g boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 leeks, washed and thickly sliced
  • 1½ tbsp Roast Chicken Seasoning
  • 30g butter
  • 30g plain flour
  • 350ml chicken stock
  • 100ml double cream or crème fraîche
  • 1 tbsp wholegrain mustard
  • 1 x 320g sheet ready-rolled puff pastry
  • 1 egg, beaten

🍴 Instructions

  1. Heat the oil in a wide pan over medium-high heat. Brown the chicken in two batches, then transfer to a plate.
  2. Lower the heat, add the leeks and cook for 6–8 minutes until softened. Stir in the Roast Chicken Seasoning.
  3. Add the butter. Once melted, stir in the flour and cook for 1 minute.
  4. Gradually add the stock, stirring well, then return the chicken to the pan. Simmer for 10 minutes until the sauce thickens and the chicken is cooked through.
  5. Stir in the cream and mustard. Transfer the filling to a pie dish and leave to cool for 15 minutes. Heat the oven to 200°C fan / 220°C conventional.
  6. Lay the pastry over the dish, trim the edges and cut a small steam hole. Brush with beaten egg.
  7. Bake for 25–30 minutes until the pastry is puffed and deeply golden. Rest for 5 minutes before serving.

🥗 Serving Suggestions

Serve with peas, buttered cabbage or green beans. If using leftover cooked chicken, add it with the cream and mustard rather than during the simmer.
