🐖 Mexican Ranch Pulled Pork Buns with Slaw

This Mexican Ranch Pulled Pork is tender, smoky and made for generous brioche buns. Our Mexican Ranch Rub seasons the pork throughout its slow cook, while a crunchy lime slaw balances the rich meat.

It is ideal for relaxed weekend cooking and can be prepared a day ahead.

🥣 Ingredients

  • 1.5kg boneless pork shoulder
  • 3 tbsp Mexican Ranch Rub
  • 1 tbsp vegetable or rapeseed oil
  • 1 onion, sliced
  • 3 garlic cloves, crushed
  • 250ml apple juice or chicken stock
  • 2 tbsp tomato purée
  • 1 tbsp apple cider vinegar
  • 6 brioche buns
  • 250g shredded white and red cabbage
  • 1 carrot, grated
  • 4 tbsp plain yoghurt or mayonnaise
  • Juice of ½ lime

🍳 How to Make Mexican Ranch Pulled Pork

  1. Preheat the oven to 150°C fan. Rub the pork with oil and Mexican Ranch Rub.
  2. Place the onion and garlic in a lidded casserole. Sit the pork on top, then add the apple juice, tomato purée and vinegar around it.
  3. Cover tightly and cook for 4½ hours, turning once, until the pork pulls apart easily.
  4. Lift the pork onto a board. Skim excess fat from the cooking liquid and simmer it until slightly thickened.
  5. Shred the pork, discarding large pieces of fat, and fold it through the reduced sauce.
  6. Mix the cabbage and carrot with yoghurt and lime. Fill the buns with pork and a modest spoonful of slaw.

🍽 Serving Suggestions

Serve with pickles, potato wedges or corn salad. Freeze leftover pulled pork in portions with a little sauce.
