🍲 Harissa Slow‑Cooked Beef

Rich, Deep & Comforting
This meltingly tender Harissa Slow‑Cooked Beef is rich, bold and deeply satisfying. The beef simmers gently with tomatoes, garlic and warm spices, absorbing the layered heat of Harissa until every bite is soft and full of flavour.
Luxurious yet effortless — ideal for cosy evenings, make‑ahead meals or feeding a hungry crowd.

🥣 Ingredients

  • 800g beef shin, chuck or stewing beef, cut into chunks
  • 1 tbsp olive or rapeseed oil
  • 1 large onion, finely chopped
  • 3 garlic cloves, crushed
  • 2 tbsp Harissa
  • 1 tsp smoked paprika (optional)
  • 1 tbsp tomato purĂ©e
  • 400g tin chopped tomatoes
  • 300ml beef stock
  • 1 tbsp honey or maple syrup (optional, to balance the heat)
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley or coriander, to serve

⏱ Timings

  • Prep time: 10 minutes
  • Cook time: 3–4 hours (oven) / 6–8 hours (slow cooker on LOW)

🍳 Method

  1. Preheat your oven to 160°C (fan) / 180°C (conventional), or set your slow cooker to LOW.
  2. Heat the oil in a large, oven‑safe pot. Brown the beef well on all sides, then remove and set aside.
  3. In the same pot, cook the onion for 5 minutes until softening.
  4. Stir in the garlic, Harissa, smoked paprika and tomato purée.
  5. Pour in the chopped tomatoes, beef stock and honey (if using).
  6. Return the beef to the pot and mix everything together.
  7. Cover and cook for 3–4 hours in the oven, or 6–8 hours in the slow cooker, until the beef pulls apart easily and the sauce is rich.
  8. Season to taste and scatter with fresh herbs before serving.

  • Spoon over fluffy couscous, creamy mash or plain rice
  • Serve with warm flatbreads or crusty bread to mop up the sauce
  • Add roasted root vegetables or steamed greens on the side
  • Leftovers are perfect in wraps or stuffed pittas
