🌮 Halloumi & Courgette Fajita Tacos

These Halloumi and Courgette Fajita Tacos are smoky, colourful and satisfyingly crisp at the edges. Salty golden halloumi, tender courgette and peppers are seasoned with our Fajita Seasoning, then piled into warm tortillas with lettuce and cooling yoghurt.

They make a quick meat-free dinner that still feels generous and full of character.

🥣 Ingredients

  • 450g halloumi, cut into 2cm cubes
  • 2 medium courgettes, sliced into ribbons or half-moons
  • 1 red pepper, sliced
  • 1 yellow pepper, sliced
  • 1 red onion, thinly sliced
  • 2 tbsp Fajita Seasoning
  • 2 tbsp olive or rapeseed oil
  • 8 small flour tortillas
  • 1 small cos lettuce, shredded
  • 150g plain yoghurt
  • Juice of ½ lime

🍳 How to Make Halloumi & Courgette Fajita Tacos

  1. Pat the halloumi dry. Toss the courgette, peppers and onion with 1 tablespoon of oil and the Fajita Seasoning.
  2. Heat a large frying pan over a high heat. Cook the vegetables in two batches for 4–5 minutes until tender with browned edges. Transfer to a plate.
  3. Add the remaining oil and halloumi to the pan. Cook for 2–3 minutes on each side until deeply golden.
  4. Return the vegetables and toss briefly with the halloumi. Mix the yoghurt with the lime juice.
  5. Warm the tortillas, add shredded lettuce and spoon over the halloumi mixture. Finish with a restrained drizzle of lime yoghurt.

🥗 Serving Suggestions

Serve with tomato salsa, avocado or quick-pickled red onions. For a larger meal, add seasoned rice or crispy potato wedges alongside.

Patting the halloumi dry helps it brown instead of releasing water. Cooking the vegetables separately prevents overcrowding, giving them lightly charred edges while the courgette stays tender rather than soggy.
