Gammon Rub Steaks with Fresh Pineapple Salsa

Pan-seared Gammon Rub steaks with fresh pineapple salsa and crushed new potatoes.

Gammon and pineapple is a classic for good reason, but fresh salsa makes the pairing brighter and less heavy. Gammon Rub gives the steaks a sweet-savoury crust with mustard, warm spice and gentle heat.

This is a quick dinner that looks far more colourful than the effort involved, especially with crushed new potatoes alongside.

🧾 Ingredients

  • 4 gammon steaks
  • 1½ tbsp Gammon Rub
  • 1 tbsp olive oil
  • 250g fresh pineapple, diced
  • ½ cucumber, diced
  • ½ small red onion, finely diced
  • 1 lime
  • 2 tbsp chopped coriander or parsley
  • 600g new potatoes

🍴 Instructions

  1. Boil the new potatoes in salted water for 15–18 minutes until tender.
  2. Mix the pineapple, cucumber, red onion, herbs, lime zest and juice. Set aside.
  3. Pat the gammon steaks dry. Rub with the oil and coat lightly with Gammon Rub.
  4. Cook in a hot frying pan or on a barbecue for 4–5 minutes per side, or until cooked through and caramelised at the edges.
  5. Drain the potatoes and crush lightly with a fork, adding a little olive oil if liked.
  6. Rest the steaks for 3 minutes, then serve with the pineapple salsa and potatoes.

The salsa also works brilliantly with grilled corn or a crunchy cabbage salad if you prefer a lighter plate.
