Gammon Rub, Leek & Potato Traybake
This colourful traybake turns gammon, potatoes and leeks into an easy all-in-one dinner. Gammon Rub brings sweetness, mustard and warm spice, while apple wedges soften and caramelise between the savoury ingredients.
Everything cooks in one tray, so the edges become golden while the mustardy pan juices bring the whole dish together.
🧾 Ingredients
- 600g thick gammon steak or joint, cut into large cubes
- 750g baby potatoes, halved
- 2 large leeks, cut into thick rounds
- 2 eating apples, cored and cut into wedges
- 2 tbsp Gammon Rub
- 2 tbsp olive oil
- 1 tbsp wholegrain mustard
- 150ml chicken or vegetable stock
- 150g green beans, to serve
🍴 Instructions
- Heat the oven to 200°C fan.
- Put the potatoes in a large roasting tray with 1 tbsp oil and half the Gammon Rub. Roast for 20 minutes.
- Add the gammon, leeks and apple.
- Mix the remaining oil and Gammon Rub with the mustard and stock. Pour into the tray and turn everything gently to coat.
- Roast for a further 25–30 minutes, turning once, until the potatoes are tender and the gammon is cooked through.
- Serve with steamed green beans and spoon over the pan juices.
