Gammon Rub, Cheddar & Spring Onion Quiche

Homemade Gammon Rub quiche with mature Cheddar, spring onion and a crisp pastry case.

This golden quiche is equally useful for lunch, picnics or a relaxed buffet. Gammon Rub gives the gammon and creamy filling a warm sweet-savoury character that works beautifully with mature Cheddar.

You can use ready-rolled pastry to keep things simple, and the quiche is just as delicious served cold the following day.

🧾 Ingredients

  • 320g ready-rolled shortcrust pastry
  • 250g gammon steak, cut into small cubes
  • 1 tbsp Gammon Rub
  • 1 tsp olive oil
  • 4 spring onions, sliced
  • 4 large eggs
  • 250ml double cream
  • 120g mature Cheddar, grated
  • 1 tsp Dijon mustard
  • Green salad, to serve

🍴 Instructions

  1. Heat the oven to 190°C fan. Line a 23cm loose-bottomed tart tin with the pastry, prick the base and chill for 15 minutes.
  2. Line with baking paper and baking beans. Bake for 15 minutes, remove the paper and beans, then bake for another 5 minutes.
  3. Toss the gammon with Gammon Rub. Heat the oil in a frying pan and cook for 5 minutes until lightly browned. Stir in the spring onions.
  4. Whisk the eggs, cream and mustard, then stir in most of the Cheddar.
  5. Scatter the gammon mixture and remaining Cheddar over the pastry case. Pour in the custard.
  6. Bake for 25–30 minutes until golden and just set with a slight wobble in the centre. Cool for at least 15 minutes before slicing.

  • Cook: 50 minutes
  • Serves: 6

Serve warm or cold with dressed leaves, tomatoes and chutney. It also packs beautifully for lunch.
