Game Rub Venison Steaks with Blackberry Sauce
Venison steak cooks quickly and rewards a confident sear, making it far less intimidating than many people imagine. Game Rub gives the lean meat a deep, aromatic crust while blackberry sauce brings just enough fruit and acidity.
Creamy celeriac mash and wilted greens keep the plate earthy and balanced. It is an impressive dinner that can still be on the table in around half an hour.
🧾 Ingredients
- 4 venison loin steaks, about 150–180g each
- 1½ tbsp Game Rub
- 1 tbsp rapeseed oil
- 20g butter
- 1 shallot, finely chopped
- 150ml red wine
- 150ml beef or game stock
- 100g blackberries
- 1 tsp redcurrant jelly
- 1 tsp balsamic vinegar
- Freshly ground black pepper, to taste
🍴 Instructions
- Take the venison out of the fridge 20 minutes before cooking. Pat dry and rub with the Game Rub.
- Heat the oil in a heavy frying pan over high heat. Sear the steaks for 2–3 minutes on each side for medium-rare, or until cooked to your preference.
- Add the butter, baste the steaks for 30 seconds, then transfer to a warm plate. Cover loosely and rest for 8 minutes.
- Lower the heat and cook the shallot in the same pan for 2 minutes.
- Pour in the red wine and scrape up the caramelised bits. Reduce by half, then add the stock, blackberries and redcurrant jelly.
- Simmer for 5–7 minutes until glossy. Lightly crush a few berries, stir in the balsamic vinegar and taste.
- Slice the rested venison across the grain and spoon over the sauce.

🥗 Serving Suggestions
Serve with celeriac or potato mash and wilted kale. Venison is lean, so avoid cooking it far beyond medium unless that is your preference.
