Slow-Cooked Game Rub Venison & Red Wine Stew

Slow-cooked Game Rub venison and red wine stew with carrots, pearl onions and mushrooms.

This slow-cooked venison stew is rich, generous and exactly right for a cold afternoon. Game Rub adds deep hedgerow-style aroma to the red wine gravy, while carrots, mushrooms and pearl onions make every bowl substantial.

Venison shoulder or stewing meat becomes beautifully tender with patient, gentle cooking. The stew is even better made a day ahead, when the flavours have had time to settle.

🧾 Ingredients

  • 800g diced venison shoulder or stewing venison
  • 2 tbsp Game Rub
  • 2 tbsp plain flour
  • 2 tbsp rapeseed oil
  • 1 onion, chopped
  • 3 carrots, cut into thick pieces
  • 2 garlic cloves, chopped
  • 2 tbsp tomato purée
  • 350ml red wine
  • 500ml beef or game stock
  • 200g pearl onions or small shallots, peeled
  • 250g chestnut mushrooms, halved
  • 2 bay leaves

🍴 Instructions

  1. Heat the oven to 150°C fan / 170°C conventional.
  2. Toss the venison with the Game Rub and flour.
  3. Heat 1 tbsp oil in a large casserole. Brown the venison in batches, then transfer to a plate.
  4. Add the remaining oil, onion and carrots. Cook for 7 minutes, then stir in the garlic and tomato purée for 1 minute.
  5. Pour in the wine and scrape the base of the pan. Simmer for 3 minutes, then add the stock, venison, pearl onions and bay leaves.
  6. Cover and cook in the oven for 2 hours.
  7. Stir in the mushrooms and return uncovered for 30–45 minutes until the venison is tender and the gravy has thickened.
  8. Rest for 10 minutes and taste before adding any extra salt.

🥗 Serving Suggestions

Serve with mashed potato, buttered noodles or crusty bread. Cool and refrigerate overnight for an excellent make-ahead dinner.

💛 Why This Recipe Works

Browning in small batches develops flavour rather than steaming the meat. Adding mushrooms later preserves their texture while the tougher venison slowly becomes tender.
