Game Rub Mushroom & Chestnut Bourguignon

Plant-based Game Rub mushroom and chestnut bourguignon with pearl onions, carrots and mashed potato.

Deep, earthy and completely plant-based, this mushroom and chestnut bourguignon shows exactly how versatile Game Rub can be. Large mushrooms provide savoury texture while chestnuts make the red-wine sauce feel substantial and autumnal.

Browning the mushrooms in batches is the key to depth. If they are crowded, they steam and the finished sauce loses the richness that makes this dish special.

🧾 Ingredients

  • 2 tbsp olive oil
  • 600g mixed mushrooms, large ones halved
  • 300g pearl onions or small shallots, peeled
  • 2 carrots, cut into thick slices
  • 2 garlic cloves, chopped
  • 2 tbsp Game Rub
  • 2 tbsp tomato purée
  • 2 tbsp plain flour
  • 350ml vegan red wine
  • 500ml vegetable stock
  • 180g cooked chestnuts
  • 2 bay leaves
  • 1 tsp balsamic vinegar

🍴 Instructions

  1. Heat 1 tbsp oil in a wide casserole over high heat. Brown the mushrooms in batches, then transfer to a plate.
  2. Add the remaining oil, pearl onions and carrots. Cook for 7 minutes until lightly coloured.
  3. Stir in the garlic, Game Rub and tomato purée for 1 minute, followed by the flour.
  4. Gradually add the red wine, scraping the base of the pan, then stir in the stock.
  5. Add the chestnuts and bay leaves. Simmer uncovered for 20 minutes.
  6. Return the mushrooms and cook for another 10–15 minutes until the vegetables are tender and the sauce is glossy.
  7. Stir in the balsamic vinegar and taste before adding any extra salt.

🥗 Serving Suggestions

Serve with mashed potato, polenta or crusty bread. Check the wine label if you need the finished dish to be strictly vegan.
