Classic Chicken Biryani
Layered chicken, fragrant rice and caramelised onions make this generous one-pot biryani perfect for sharing.

Prep: 25 minutes | Cook: 50 minutes | Serves: 6
🧂 Ingredients
- 700g chicken thighs
- 2 tbsp Biryani Masala
- 200g natural yoghurt
- 300g basmati rice
- 2 onions, sliced
- 2 garlic cloves, crushed
- 20g ginger, grated
- 500ml chicken stock
- 2 tbsp oil
- Coriander and raita, to serve
🔪 Method
- Coat chicken with yoghurt and half the spice blend for 30 minutes.
- Rinse rice and cook for 6 minutes, then drain.
- Brown onions in oil; reserve half. Add garlic, ginger, remaining spice and chicken.
- Layer over rice and stock, cover tightly and cook gently for 25 minutes.
- Rest for 10 minutes, fluff and finish with reserved onions.
🍽️ Serving Suggestions
Serve with raita, fresh salad or warm flatbread, depending on the occasion.
