Crispy Potato Aloo Chaat

Crispy potato aloo chaat topped with yoghurt, tamarind and mint chutneys, red onion, coriander and sev.

Crispy potatoes, cool yoghurt, lively chutneys and a final sprinkle of Chaat Masala make this aloo chaat wonderfully difficult to stop eating. Every mouthful is crunchy, creamy, sweet, sour and gently hot—the very reason chaat is such joyful food.

Serve it as a generous sharing plate and assemble it immediately before eating so the potatoes keep their crisp edges.

🧾 Ingredients

  • 800g baby potatoes, halved
  • 2 tbsp vegetable oil
  • 2 tsp Chaat Masala, divided
  • 150g thick natural yoghurt
  • 3 tbsp tamarind chutney
  • 3 tbsp mint chutney
  • ½ small red onion, finely chopped
  • 1 medium tomato, deseeded and diced
  • Small handful fresh coriander, chopped
  • 30g sev, optional
  • 1 lime, cut into wedges

👩‍🍳 Instructions

  1. Heat the oven to 220°C, 200°C fan or Gas 7. Simmer the potatoes in salted water for 8 minutes, then drain thoroughly.
  2. Tip the potatoes onto a large baking tray, lightly crush their cut edges and toss with the oil and 1 teaspoon of Chaat Masala.
  3. Roast for 30–35 minutes, turning once, until deeply golden and crisp.
  4. Spread the hot potatoes over a shallow serving bowl. Spoon over the yoghurt, tamarind chutney and mint chutney.
  5. Scatter over the onion, tomato, coriander and sev. Finish with the remaining Chaat Masala and serve immediately with lime wedges.

  • Serves: 4 as a snack or side

🍽️ Serving Suggestions

Make it part of a street-food spread with samosas, pakoras and cold mango drinks. For a heartier plate, add drained chickpeas.
