Warm Masala Corn Chaat Cups

Warm charred sweetcorn chaat with red pepper, onion, coriander, lime and yoghurt served in colourful ceramic cups.

Sweet, smoky and tangy, these warm corn cups are made for sharing. A spoonful of Chaat Masala cuts through the sweetness of the corn with amchoor, cumin, mint and a lively little kick of cayenne.

Serve them in small cups for parties and barbecues, or pile everything into one bowl for a fast side dish.

🧾 Ingredients

  • 500g sweetcorn, fresh, frozen or well-drained from tins
  • 1 tbsp vegetable oil
  • 1 small red pepper, finely diced
  • ½ small red onion, finely chopped
  • 2 spring onions, sliced
  • 2 tsp Chaat Masala
  • Juice of 1 lime
  • 3 tbsp natural yoghurt or plant-based alternative
  • Small handful fresh coriander, chopped
  • Pinch of cayenne pepper, optional

👩‍🍳 Instructions

  1. If using frozen sweetcorn, defrost and pat it dry. Heat a large frying pan over a high heat.
  2. Add the oil and corn. Cook for 6–8 minutes, stirring only occasionally, until patches of the corn are golden and lightly charred.
  3. Add the red pepper and cook for 2 minutes. Remove the pan from the heat.
  4. Stir through the red onion, spring onions, Chaat Masala and lime juice.
  5. Spoon into small cups or a serving bowl. Drizzle with yoghurt and finish with coriander and cayenne, if using.

  • Serves: 4–6 as a snack

🌽 Serving Suggestions

Serve warm at barbecues, alongside grilled chicken or as part of an Indian-inspired sharing table. Add crumbled paneer or feta for a richer version.

Cooking the corn in a wide hot pan develops toasted flavour without drying it out. Raw onion and lime keep the finished chaat crisp and lively, and the yoghurt softens the spice.

🌿 Try It With

Add a little Ground Cumin for deeper toastiness or an extra pinch of Amchoor Mango Powder for sharper tang.
