Baked Pumpkin Spice Cheesecake

Baked pumpkin spice cheesecake with a golden biscuit base and a creamy slice served with crème fraîche.

Creamy, gently spiced and far easier than its elegant appearance suggests, this baked cheesecake is a fine finish to an autumn dinner. Pumpkin Spice gives the pumpkin filling a rounded warmth without overpowering the cream cheese.

Bake it the day before serving: a slow chill sets the texture beautifully and leaves you with nothing more demanding than cutting generous slices when dessert time arrives.

🧾 Ingredients

  • 250g digestive biscuits
  • 100g unsalted butter, melted
  • 600g full-fat cream cheese, at room temperature
  • 150g caster sugar
  • 200g pumpkin purée
  • 150ml soured cream
  • 3 large eggs
  • 2 tsp Pumpkin Spice
  • 1 tsp vanilla extract
  • 1 tbsp cornflour
  • Crème fraîche, to serve

🍴 Instructions

  1. Heat the oven to 150°C fan / 170°C conventional. Grease and line the base of a 20cm springform tin.
  2. Crush the biscuits finely, mix with the melted butter and press firmly into the base. Chill for 15 minutes.
  3. Beat the cream cheese and sugar on low speed just until smooth.
  4. Mix in the pumpkin purée, soured cream, Pumpkin Spice, vanilla and cornflour.
  5. Add the eggs one at a time, mixing gently after each and avoiding excessive air.
  6. Pour over the base and bake for 55–65 minutes. The edge should be set while the centre still has a gentle wobble.
  7. Turn off the oven, leave the door slightly open and cool for 1 hour. Chill for at least 6 hours or overnight.

  • Cook: 55–65 minutes
  • Serves: 10–12

🥗 Serving Suggestions

Remove from the fridge 20 minutes before serving and add a spoonful of crème fraîche. A little orange zest or toasted pumpkin seed brittle makes a good optional finish.
