Ras El Hanout Spiced Carrot & Hummus Flatbreads
Creamy hummus, caramelised spiced carrots and warm flatbreads make a wonderfully relaxed lunch or sharing plate. Ras El Hanout transforms everyday carrots with fragrant warmth, and toasted seeds add welcome crunch.
🥣 Ingredients
- 600g carrots, cut into batons
- 2 tbsp olive oil
- 1½ tbsp Ras El Hanout
- 1 tsp honey or maple syrup
- 4 large flatbreads
- 250g hummus
- Juice of ½ lemon
- 2 tbsp toasted pumpkin seeds or chopped pistachios
- A handful of coriander or parsley
- Salt and black pepper
🍳 How to Make It
- Preheat the oven to 200°C fan. Place the carrots on a roasting tray.
- Add the oil, Ras El Hanout, honey or maple syrup, salt and pepper. Toss well and roast for 25–30 minutes until tender and caramelised.
- Warm the flatbreads briefly in the oven or a dry frying pan.
- Spread each flatbread generously with hummus and add the roasted carrots.
- Finish with lemon juice, toasted seeds and fresh herbs. Serve open or fold to eat.
