Ras El Hanout Spiced Carrot & Hummus Flatbreads

Ras El Hanout spiced carrot and hummus flatbreads with chickpeas, herbs and yoghurt drizzle.

Creamy hummus, caramelised spiced carrots and warm flatbreads make a wonderfully relaxed lunch or sharing plate. Ras El Hanout transforms everyday carrots with fragrant warmth, and toasted seeds add welcome crunch.

🥣 Ingredients

  • 600g carrots, cut into batons
  • 2 tbsp olive oil
  • 1½ tbsp Ras El Hanout
  • 1 tsp honey or maple syrup
  • 4 large flatbreads
  • 250g hummus
  • Juice of ½ lemon
  • 2 tbsp toasted pumpkin seeds or chopped pistachios
  • A handful of coriander or parsley
  • Salt and black pepper

🍳 How to Make It

  1. Preheat the oven to 200°C fan. Place the carrots on a roasting tray.
  2. Add the oil, Ras El Hanout, honey or maple syrup, salt and pepper. Toss well and roast for 25–30 minutes until tender and caramelised.
  3. Warm the flatbreads briefly in the oven or a dry frying pan.
  4. Spread each flatbread generously with hummus and add the roasted carrots.
  5. Finish with lemon juice, toasted seeds and fresh herbs. Serve open or fold to eat.
