Pilau Rice Stuffed Peppers with Feta

Roasted peppers stuffed with golden pilau rice, chickpeas, spinach and feta

These stuffed peppers turn fragrant pilau into a colourful oven-baked dinner. The sweet pepper shells soften around a generous filling of golden rice, chickpeas and spinach, while feta adds a salty, creamy finish. Pilau Rice Seasoning makes the aromatic base easy to get right.

Ingredients

  • 4 large red or yellow peppers
  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 1½ tbsp Pilau Rice Seasoning
  • 200g basmati rice, rinsed
  • 425ml hot vegetable stock
  • 1 x 400g tin chickpeas, drained
  • 150g cherry tomatoes, quartered
  • 100g baby spinach, roughly chopped
  • 120g feta, crumbled
  • Fresh parsley and lemon wedges, to serve

Method

  1. Heat the oven to 200°C/180°C fan/gas 6. Halve the peppers lengthways and remove the seeds. Brush with a little oil and bake cut-side up for 15 minutes.
  2. Meanwhile, soften the onion in the remaining oil for 6 minutes. Stir in the Pilau Rice Seasoning and rice.
  3. Add the stock, cover and cook on the lowest heat for 14 minutes. Remove from the heat and rest, covered, for 5 minutes.
  4. Fluff the rice, then fold through the chickpeas, tomatoes, spinach and half the feta.
  5. Spoon the filling generously into the pepper halves. Scatter over the remaining feta and bake for 18–20 minutes until the peppers are tender and the tops are lightly golden.
  6. Finish with parsley and lemon. Taste the filling before adding salt because both the blend and feta are already seasoned.

Serving Suggestions

Two pepper halves make a generous main course with a leafy salad. One half works beautifully as a side for grilled chicken or fish.

Why This Recipe Works

Part-roasting the peppers prevents a crunchy shell, while resting the rice before filling keeps the grains separate. Feta and lemon sharpen the naturally sweet vegetables.
