Easy Creamy Chicken Korma

Tender chicken in a silky, gently spiced coconut sauce makes this easy korma wonderfully comforting without being heavy or fiery.

🧂 Ingredients

  • 600g boneless chicken thighs, cut into chunks
  • 2 tbsp Korma Masala
  • 1 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 tsp grated fresh ginger
  • 400ml coconut milk
  • 150ml chicken stock
  • 2 tbsp natural yoghurt
  • Fresh coriander, to serve
  • Basmati rice and naan, to serve

🔪 Method

  1. Toss the chicken with 1 tbsp Korma Masala.
  2. Heat the oil in a large pan and cook the chicken for 5–6 minutes until lightly golden. Transfer to a plate.
  3. Cook the onion gently for 6–8 minutes until soft. Add the garlic, ginger and remaining Korma Masala, then stir for 30 seconds.
  4. Return the chicken and pour in the coconut milk and stock. Simmer uncovered for 18–20 minutes until the chicken is cooked through and the sauce has thickened.
  5. Take the pan off the heat, stir in the yoghurt and finish with coriander. Serve with rice and naan.

🍽️ Serving Suggestions

  • Add peas or baby spinach for extra vegetables.
  • Serve with mango chutney and cucumber salad.
  • Use chicken breast if preferred, reducing the simmer slightly to keep it tender.
