Chimichurri Steak with Crispy Garlic Potatoes

Juicy steak, crunchy golden potatoes and a lively herby dressing make this the sort of dinner that looks impressive without keeping you in the kitchen all evening. Our Chimichurri Seasoning brings oregano, basil, parsley, thyme, garlic, black pepper and gentle red pepper warmth together in one easy blend.

🥣 Ingredients

  • 2 sirloin or rump steaks, about 250g each
  • 700g baby potatoes, halved
  • 3 tbsp olive oil
  • 3 tbsp Chimichurri Seasoning, divided
  • 1 tbsp red wine vinegar
  • 1 tsp lemon juice
  • Sea salt, only if needed
  • Lemon wedges, to serve

👩‍🍳 Instructions

  1. Heat the oven to 220°C/200°C fan/gas 7. Toss the potatoes with 1 tbsp olive oil and 1 tbsp Chimichurri Seasoning. Roast for 35–40 minutes, turning once, until crisp and golden.
  2. Mix 1½ tbsp Chimichurri Seasoning with 1½ tbsp olive oil, the red wine vinegar and lemon juice. Leave for 10 minutes so the dried herbs soften.
  3. Rub the steaks with the remaining olive oil and ½ tbsp Chimichurri Seasoning. Heat a heavy frying pan until very hot, then cook to your liking—about 2–3 minutes per side for medium-rare, depending on thickness.
  4. Rest the steaks for 5–8 minutes before slicing across the grain.
  5. Spoon the herby dressing over the steak and serve with the crispy potatoes and lemon wedges. Taste before adding any extra salt, as the blend already contains fine salt.
