Chimichurri Prawns with Charred Corn
Sweet prawns and smoky charred corn are brilliant partners for a herby, peppery chimichurri coating. This bright skillet dinner comes together in around 20 minutes, making it ideal when you want something colourful and exciting without much washing-up.
🥣 Ingredients
- 400g raw peeled king prawns, defrosted if frozen
- 2 tbsp Chimichurri Seasoning
- 2 tbsp olive oil
- 2 corn cobs, or 300g drained sweetcorn
- 1 lime
- 1 small red onion, finely sliced
- 150g cherry tomatoes, halved
- Fresh coriander or parsley, optional
👩🍳 Instructions
- Pat the prawns dry. Mix them with 1 tbsp Chimichurri Seasoning, 1 tbsp olive oil and the finely grated zest of half the lime.
- Slice the kernels from the corn cobs. Heat a large frying pan over a high heat and cook the corn without stirring for 2 minutes, then toss and cook until lightly charred. Transfer to a bowl.
- Add the remaining oil to the pan. Cook the red onion for 2 minutes, then add the prawns and fry for 3–4 minutes, turning once, until pink, opaque and cooked through.
- Return the corn to the pan with the tomatoes, remaining seasoning and juice of half the lime. Toss over the heat for 1 minute.
- Serve immediately with the remaining lime cut into wedges and fresh herbs if liked.
