🔥 Smoky Bonfire Mackerel Traybake with Veg
This colourful Bonfire Spice Mackerel Traybake is smoky, vibrant and wonderfully easy. The sweet heat of Bonfire Spice pairs perfectly with rich mackerel and roasted vegetables for a one-tray dinner that feels special with barely any effort.
Everything roasts together until the vegetables are soft and caramelised, the fish flakes beautifully, and the edges catch just enough for that unmistakable bonfire-night flavour.
🥣 Ingredients
- 4 mackerel fillets (or other oily fish)
- 2 tbsp Bonfire Spice
- 2 tbsp olive or rapeseed oil
- 1 tbsp lemon juice
- 2 peppers, sliced
- 1 red onion, cut into wedges
- 200g cherry tomatoes
- 2 small courgettes, sliced
- Salt, to taste
- Fresh parsley or dill, to serve

Prep time: 10–15 minutes
Cook time: 20–25 minutes
🍳 Method
- Preheat your oven to 200°C (fan) / 220°C (conventional).
- Tip the peppers, onion, cherry tomatoes and courgettes onto a large baking tray.
- Drizzle with half the oil, sprinkle over 1 tbsp Bonfire Spice, season with salt and toss well.
- Spread into an even layer and roast for 10 minutes to soften slightly.
- Meanwhile, mix the remaining oil, 1 tbsp Bonfire Spice and the lemon juice in a small bowl.
- Remove the tray from the oven, nestle the mackerel fillets skin-side up on top of the vegetables, then brush generously with the spice mixture.
- Return to the oven for 10–15 minutes until the fish is cooked through and the skin is lightly charred.
- Finish with fresh herbs and an extra squeeze of lemon before serving, if desired.
