  1. In a bowl, mix the oil, honey, tomato purée, lemon juice and Bonfire Spice until smooth.
  2. Season with salt, then taste and adjust the sweetness or acidity if required.
  3. Place the chicken thighs into a shallow dish or large food bag.
  4. Pour over the marinade and coat every piece thoroughly.
  5. Cover and refrigerate for at least 30 minutes, or overnight for the best flavour.
  6. When ready to cook, preheat the oven to 190°C (fan) / 210°C (conventional), or heat your BBQ to a medium-high temperature.
  7. Oven: Roast for 30–40 minutes, turning once and basting with any remaining marinade until sticky, beautifully charred and cooked through.
  8. BBQ: Grill for 20–25 minutes, turning regularly and basting until the skin is crisp and the juices run clear.
  9. Allow the chicken to rest for a few minutes before serving.
