Berbere Lamb Meatballs with Herby Couscous
Rich lamb is an excellent match for the cloves, cardamom, cumin and chilli in Berbere Spice Blend. A bright couscous salad and lemon yoghurt keep this generous platter fresh and balanced.
🥣 Ingredients
- 500g lamb mince
- 2 tbsp Berbere Spice Blend, divided
- 1 small onion, grated
- 40g breadcrumbs
- 1 egg, beaten
- 200g couscous
- 250ml hot vegetable stock
- ½ cucumber, diced
- 2 tomatoes, diced
- Small handful parsley and mint, chopped
- 150g yoghurt
- 1 lemon
👩🍳 Instructions
- Mix lamb, 1½ tbsp seasoning, onion, breadcrumbs and egg. Shape into 16 meatballs.
- Bake at 210°C/190°C fan/gas 6 for 18–22 minutes, turning once, until browned and cooked through.
- Cover couscous with hot stock for 5 minutes, then fluff. Stir through cucumber, tomato and herbs.
- Mix yoghurt with lemon juice and remaining seasoning.
- Pile meatballs over couscous and drizzle with the yoghurt.
