Prawn, Pea & Roasted Pepper Rice
This quicker one-pan rice captures the cheerful flavours of paella without needing a special pan or a long cooking session. Sweet peppers and peas balance the cayenne warmth in Paella Spice, while juicy prawns make it feel special.
🥣 Ingredients
- 400g raw peeled king prawns
- 250g short-grain or paella rice
- 1½ tbsp Paella Spice
- 1 onion, finely chopped
- 2 roasted red peppers from a jar, drained and sliced
- 150g frozen peas
- 2 tbsp olive oil
- 400g tin chopped tomatoes
- 650ml hot fish or vegetable stock
- 1 lemon
- Fresh parsley, optional
- Sea salt, to taste
👩🍳 Instructions
- Pat the prawns dry and toss with ½ tbsp Paella Spice.
- Heat 1 tbsp oil in a wide frying pan. Cook the onion for 6 minutes, then stir in the remaining seasoning.
- Add rice, tomatoes and stock. Simmer uncovered for 17–20 minutes, stirring only occasionally.
- Add the peppers and peas for the final 5 minutes. In a separate hot pan, cook the prawns in the remaining oil for 3–4 minutes until opaque and cooked through.
- Fold the prawns through the rice, rest for 3 minutes and finish with lemon and parsley.
