Lemon Pepper & Garlic Sea Bass with Crushed New Potatoes

🐟 Lemon Pepper & Garlic Sea Bass with Crushed New Potatoes

Crisp-skinned sea bass, buttery crushed potatoes and bright green beans make this feel like a restaurant dinner without the restaurant effort. Our Lemon Pepper & Garlic Rub brings the citrus, pepper and savoury garlic together in one easy step.

The trick is to dry the fish well and leave it alone while the skin crisps. Thirty-five minutes later, dinner is ready.

🧾 Ingredients

  • 2 sea bass fillets, skin on
  • 1½ tsp Lemon Pepper & Garlic Rub
  • 500g baby new potatoes
  • 200g fine green beans, trimmed
  • 25g butter
  • 1 tbsp olive oil
  • 1 lemon, cut into wedges
  • 2 tbsp chopped fresh parsley
  • A pinch of Lemon Salt, optional

Instructions

  1. Boil the potatoes in lightly salted water for 15–18 minutes until tender. Add the beans for the final 4 minutes, then lift them out and keep warm.
  2. Drain the potatoes well. Return them to the pan with the butter, parsley and a squeeze of lemon, then crush lightly with a fork so they remain chunky.
  3. Pat the sea bass completely dry. Rub the flesh with half the seasoning and sprinkle the remaining seasoning over the skin.
  4. Heat the olive oil in a non-stick frying pan over a medium-high heat. Lay the fillets in skin-side down and press gently for 20 seconds so they stay flat.
  5. Cook for 3–4 minutes without moving them, until the skin is crisp. Turn and cook for another 1–2 minutes, depending on thickness.
  6. Serve immediately with the crushed potatoes, beans and lemon wedges.

🍽️ Serving Suggestions

Add wilted spinach, tenderstem broccoli or a crisp rocket salad. A spoonful of herby yoghurt also works beautifully alongside the fish.
