Hot Madras Beef & Potato Curry
Deeply savoury, warming and packed with proper curry flavour, this slow-simmered beef and potato curry is exactly the sort of dinner to look forward to on a chilly evening. Long, gentle cooking leaves the beef beautifully tender while the potatoes soak up the rich tomato sauce and all those aromatic spices.

🧾 Ingredients
- 600g diced stewing beef
- 1 tbsp vegetable oil
- 1 large onion, chopped
- 2 garlic cloves, crushed
- 1 tbsp grated ginger
- 2 tbsp Hot Madras Curry Powder
- 400g chopped tomatoes
- 300ml beef stock
- 400g potatoes, cut into chunks
- Fresh coriander, to serve
👩🍳 Instructions
- Heat the oil in a casserole and brown the beef in batches.
- Add the onion and cook for 5 minutes, then stir in the garlic, ginger and Hot Madras Curry Powder.
- Return the beef, add the tomatoes and stock, cover and simmer gently for 60 minutes.
- Add the potatoes and cook uncovered for a further 25-30 minutes until tender and the sauce is rich.
- Scatter with coriander before serving.
